- 250g Fruit (berries make a very tasty coulis)
- 50g Caster sugar
- Juice of half a Lemon

Step 1
Pruee the fruit, caster sugar and lemon juice (using a blender is the quickest method)
Step 2
Pass through a seive to ensure the puree is smooth
Step 3
Serve
To get restaurant quality coulis before passing through a seize heat the mixture.
Cook until the fruit release their juices, then simmer until the liquid is reduced by almost half (about 15 mins) then pass through the seive and cool
