- 1 large onion

Preparation
Step 1
Place knob of beef dripping in a frying pan and, on a medium heat, seal the beef joint all over.
Pre-heat oven to highest setting
Step 2
Place sealed beef brisket into a deep tin with lid.
Peel onion and place in tin with the beef.
Cover the tin with foil and place lid on tin to create a tight seal.
Step 3
Place in oven on its highest setting and cook for 15 mins.
After 15 mins, turn oven down to gas mark 1 and cook:-
1kg joint for 3 hours
1.5kg joint for 4 hours
2kg joint for 5 hours
Step 4
Remove from oven and let rest for 30 mins before carving.
Even with resting the meat will be so soft and tender that carving will be difficult (it will fall apart rather than carve).
