Step 1
Prepare the pastry by mixing the flour, sugar, diced butter and salt. Add a little water to form a ball, then film and refrigerate for at least 1 hour.

Take the dough out of the fridge, roll out into a circle on baking paper and place in tin. Then pre-cook for + or - 20 minutes at 200 ° C.

Meanwhile, prepare the custard: In a bowl, whisk the yolks with the sugar until the mixture whitens. Add the flour and 100ml of milk 100.
