Indian style tomato chutney

Heat a little oil in a saucepan
- 4 tomatoes, diced
- 40g of sugar
- 1 tbsp curry
- 1 tsp turmeric
- 1 tsp grated ginger
- 1 tsp cumin seeds
- Asafetida spice
- oil
- salt
- freshly ground pepper

Slice the salami sausage and the stems of the large cep mushrooms into cubes (brunoise)
- 520 g white mushrooms (ceps)
- 500 g large cep mushrooms
- 200 g salami sausage or saucisson
- 3 tbsp chicken stock
- 100 g shallots
- 500 g pineapple tomatoes
- 500 g beef tomatoes
- 200 g red onions
- 100 g white balsamic vinegar
- 100 g sherry vinegar
- 200 g caster sugar
- Olive oil
- 5 cloves of garlic
- 100 g butter
- 1 sprig of rosemary
- 200 g of single cream
Marrow Chutney

Place marrow, tomatoes, apples, onions and cucumber in a large pan
- 3lbs marrow, diced
- 2 1/2lbs green tomatoes, chopped
- 1 1/2 apples, chopped
- 1 1/2 onions, chopped
- 1/2 cucumber
- salt
- 3/4lb brown sugar
- 1pt vinegar
- 1/2oz pickling spice
- 1/2tsp mustard
- 1/2tsp turmeric

Mango chutney

Peel the green skin off the mangoes and slice them in cubes
- 2 raw mangoes, peeled and cubed
- 1 tablespoon red chili powder/cayenne (or to taste)
- 2 red dry chili pepper (or more or less)
- 1 tablespoon oil
- salt to taste
- 1 teaspoon panch phoron:
- jeera/cumin, fenugreek/methi,nigella/kalonji, radhuni/can be substituted with celery seeds or use brown mustard seeds , fennel seeds/saunf
- 2 cups of jaggery, grated or broken/chopped into small pieces (or brown sugar or molasses- adjust amount) – or to taste
- 1/4 – 1/2 teaspoon dry ginger powder (optional) – or adjust amount to taste
- 1 tablespoon lime juice
- 1 dried red chili pepper + 1.5 teaspoon of cumin seeds + 2 cloves – dry roasted separately until fragran
Roast Squash with Pear and Kiwi Chutney

- 3 tbsp vegetable oil
- 2 tsp Panch pooran mix (1tsp fenugreek, 1 tsp poppy seed, 1 tsp black mustard seed, 1 tsp fennel, 1 tsp cumin seeds)
